I never liked salad dressing of any kind. So I always eat salad dry. I like to make my own (lettuce, spinach, green peppers, tomatoes, carrots, celery, jalapeños, cucumbers, onions, mushrooms, and chicken are the norm; add different things to those to give a different taste). Sometimes I may add different peppers or meat to it.
We have a vegetable garden at our house, so we tend to eat a lot of salads when they are ready for picking.

Interesting. I'm not sure what kind of work you were in, or if all work was done on a billable hour basis vs. retainer basis...but that feels high. Did you guys recover all fees?
$1000 is not yet standard for partners at law firms. Some top firms will have $1000/hr guys...but I think it's still limited. But idk.

Maybe some people eat salads because they like the taste, and not because they are trying to lose weight.

The best salads are ones you make yourself. These restaurant or take-away salads are usually worse than Big Macs! (Just like anything you get from Subway is worse than McDonalds).
Cut up all your own vegetables - lettuce (all types), tomatoes or cherry tomatoes, onions, capsicums, cucumber and basically any other vegetable that takes your fancy.
Avoid cheese and croutons.
Now the tasty stuff you can add that is still healthy - bacon, olives, walnuts, green apple slices.
Offcourse the proteins are fine - chicken breast, beef, tuna, smoked salmon, salmon cooked or raw (sashimi style), eggs (boiled or poached) - all great.
No dressing unless you drizzle olive oil or maybe balsamic vinegar.
Healthy salads tastes as good or better than the crappy ones we've all been used to (I love Caesar salad but can now live without it).
