 Epcot
I'm on my way home from Walt Disney World in Orlando, and the last park we went to was Epcot. None of the parks was perfect, but Epcot was noticeably lacking in excitement outside of the World showcase. Most of the rides were simulators, and the one that wasn't, Chevrolet Test Track, was only exciting once and was boring on a deride. I plan to visit all the parks again in a few years with my mom who's never been., along with checking out Universal. Will it be worth it to bring my mom to Epcot though considering how dull overall I found it?

This is a bizarre question.  You more or less say, "I just visited Disney World. Epcot bored me. I am going to Disney again in a few years. Say, should I visit Epcot?" As for your mom, you surely know her interests and tastes more than any of us. Obviously if you want to visit ALL the parks with her, then Epcot is one of the parks, so... Oh, and Epcot is my favorite, though I only visited Disney World once when I was 10.

Never heard of it till now. A quick google makes me say that it reminds me of Tomorrowland.
To answer your question; No, based on your own experience of it, I don't see why it would be worth the time.

Epcot was my favorite Disney World park. The only one I would skip on repeat would be Disney's Animal Kingdom.
For an adult without kids in tow, I think Epcot has the most to offer.

Epcot is definitely the best park for adults because you can get super turnt and have a drink in every country like I do every time I'm at Disney  I guess you can't partake in that, though, zwackerm.

Then you would have been to the city below the parks in holding. Truly the most interesting area of disney. You'd think you were in. A Bond villain base.
Epcot is so much better as an adult. But that's because of the food and drink, fireworks show was pretty great too. In all honesty when I went last year, none of the parks have really changed the last 20 years. Universal was where it's at. Plus you'd love the Harry Potter stuff.

Well, have never been there myself, but E.P.C.O.T. is supposed to be a Social Studies-kind of park, representing peoples, cultures, and technology. And part of the original plan for E.P.C.O.T. was to be a part of a true residential community known as "The City of Tomorrow". This part of the plan feels creepy to me. But no matter. Let's allow Mr. Disney himself to tell you all about it. Disney owns my apartment complex. I only leave E.P.C.O.T. really. But that's to take a break from that guy always pushing the broom behind me.
I wonder if they'll be using Roombas in Star Wars Land?
