Fear and Loathing in Las Vegas is the favorite of those I have seen. However, I haven't seen Time Bandits, Brazil and Twelve Monkeys, so I am pretty sure I am not qualified to vote for two.

Gilliam is like Burton to me: Former animators who make films that look great but suffer in the story and pacing departments.
Monty Python and the Holy Grail is one of my favorite comedies of all time, but all he really did on that film were the visuals -- Terry Jones was the main director.
All of his films could have used editing, because they tend to ramble quite a bit. There are moments of true brilliance in each, though.
I've seen them all except Tideland...
I voted for Holy Grail and Time Bandits.
