Why not try renting a small house or a duplex in your area instead of an apartment. Maybe you could also rent a 2 bedroom apt. Sometimes there isn't that huge a difference between that and single bedrooms. 30 days is still plenty of time though you might consider a month to month for an additional 30 days if you feel under too much pressure.

So we looked hard again over the weekend, and I think we found a townhome we can afford and that takes pets. We sent in our application yesterday.

I've never NOT filled out an application for a place I'm renting. Maybe it's just an Arizona thing, but I doubt it.
Anyway... Our application just got accepted! So we will be renting a nice townhouse for the next 12+ months. Yay!

Do you mean a contract or lease agreement? Cause of course I fill that out and sign it. Sometimes a credit check, never references or or work info though.

Here, it's also hard to find any place to rent, house or apartment, without a semester or yearly (year being most common) lease agreement. The majority of rental housing follows an application process that involves a credit check, work information, etc.. They're also quite expensive.
It's also incredibly hard to break said lease agreement, regardless of the situation. Once you sign the papers, you're pretty much legally binded to the lease until it's paid in full. At least, this is what I've heard from friends, co-workers, and so on. Thankfully, my boyfriend have never had to experience this.
